Here are a few things to improve your life, or at least the parts of your life that loves eggs… your “egg’s life.”

There is a simple way to test if those raw eggs in the back of the fridge are still good. Simply drop the suspect egg gently into a glass of cold water. An egg that sinks right to the bottom is very fresh, an egg that bounces but still stays on the bottom is good enough, and an egg that floats should be thrown out. This is because the shell is semi-permeable, and over time the air sack inside will get larger.
If you need to know whether or not an egg has been hard boiled, spin it on the counter. A hard boiled egg with it’s solid center will spin evenly, while the yolk of an uncooked egg makes it wobble.
Salmonella is found in only 0.005% of eggs. However, if you’re worried, there are two steps you can take. First, wash your eggs, preferably when you get them. Unless the actual chicken was infected, the salmonella is found on the outside of the shell, and can be washed off with soap and warm water (earlier is better because of that whole semi-permeable thing). Eggs are washed before they are sold, but this will provide an extra line of defense. Second, and more important, cook your eggs. Heat destroys salmonella, and salmonella is most likely to be inside the yolk if it came from an infected chicken.
